After hearing about my project, Ooni very kindly decided to help me out.
I was sent a gift of a laser thermometer! this means that I can measure the temperature of the pizza stones. Now I know when to start cooking and when to let the ovens heat up a bit.
They also gave me a turning peal so I can keep the pizzas evenly cooked with no burnt edges!
